Applesauce

8 assorted apples (best are mix of yellow and green)
1 Tbl cinnamon
1 Tbl water
2 Tbl honey (preferably organic and raw)
Lemon to taste
Preparation
Preheat oven to 350F.
Peel and core apples. Cut in half and then cut each half into four slices. Dice the slices into chunks about an inch thick. Toss the apples with cinnamon and place in a baking dish. Add the water to the baking dish and cover tightly with foil and roast in the oven for about 30-40 min until tender.
When apples are tender, place in a blender and blend with honey. Add a few drops of lemon juice to balance the flavor. You don’t want to taste the lemon, it just helps round out the flavor.
Serve hot for a healthy dessert, or chill for a day time snack. If you have a lot of apples, you can make a giant batch and can it in mason jars to preserve.
