Figs are almost out of season and I wanted snatch some before it was too late. This is a simple yet beautiful salad. The ingredients are the star, so make sure you buy the best ingredients possible.
1/2 cup balsamic vinegar
extra virgin olive oil
Put the balsamic in a small sauce pot and bring to a simmer. Let it reduce until it is somewhat thick like syrup.
Meanwhile, get a bowl of ice water and wash a handful of arugula. This will perk up the arugula and make it crisp. Strain the water and let the arugula dry on a towel in a bowl.
Roll the goat cheese into small circles and set aside. Take the figs and slice one in quarters, one lengthwise, and one widthwise.
To assemble, take a brush and paint the balsamic in a rectangle in the middle of the plate. Gently toss the arugula with a little extra virgin olive oil and sea salt. Taste to see if its seasoned correctly. Neatly place the arugula down the middle of the balsamic. Randomly scatter the goat cheese and figs artistically.
