Quinoa is a fluffy grain as versatile as rice with a delicate nutty flavor. This crop has become highly appreciated for its nutritional value, particularly its high protein content (12-18%). It contains a balanced set of essential amino acids making it a complete protein source. In addition it is a good source of dietary fiber and high in B vitamins, phosphorus, magnesium and iron. Quinoa is gluten-free and considered easy to digest.
1 cup organic red quinoa, washed and rinsed
1 1/2 cups water
1 medium beet, peeled and diced
2 tablespoons extra virgin olive oil
2 tablespoons freshly squeezed lemon juice
6 red radishes, sliced into half moons
2 tablespoons finely minced red onion
1/4 cup finely chopped chives
1/4 cup organic dried cranberries
Dijon mustard to taste
Lemon juice to taste
To prepare: wash 1 cup of Quinoa several times in cold water, rinse, and add to 1 1/4 cups of boiling water, cover, reduce heat. Add beet, and simmer for 15 minutes. Let stand for 5 minutes, and fluff. Add all other ingredients and serve!
