1 bunch kale
½ cup onion, minced
2 cloves garlic, minced
¼ cup sun-dried tomato chopped
2 Tablespoons Parmesan, grated
2 Table spoons pine nuts, toasted
To prepare the kale, wash the leaves well and pull the leaves from the stem. Stack each leaf on top of each other and roll into a “cigar” shape. Slice as thin as you can, making SUPER thin strips of kale.
Heat a medium sauté pan to medium heat. Add a pat of butter. Once it begins to melt and foam, add the onions and a pinch of salt and lower the heat to low. Stir the onions around and allow them to sweat until translucent for about 5 minutes. If the pan gets too dry add a little water.
Once the onions are translucent turn the heat up to medium and add ½ tablespoon butter and kale, garlic, and sun-dried tomatoes. Sautee the kale for about 3-4 minutes until tender and bright green.
Once tender, turn the heat off and the parmesan and pine nuts. Taste for more seasoning. Serve with love!
