Vegetable Medley with Brown Rice

This is what a happy customer suggested for the contents of our box this week:

Ingredients

Roasted eggplant
Leeks
Peppers
Zucchini
Onion
Olive Oil
Fresh Rosemary
Fire Roasted Diced Tomatoes (can)

Preparation

Combine veggies with brown rice and can of fire roasted diced tomatoes. Top with basil and serve with spinach salad.
